Sweet Pumpkin Cream: Autumn’s Best-Kept (and Tastiest) Secret

Sweet crema di zucca dolce is the lesser-known cousin of savoury pumpkin purée, and arguably the more intriguing one. No onion, no salt—just pumpkin, autumn spices and a whisper of honey. The result is a fragrant, spreadable velvet that perfumes toast at breakfast, slips inside crostate, cosies up to aged cheeses or can be eaten straight from the jar.

Sweet vs. savoury: two pumpkins, two worlds

Both start with the same orange flesh, yet finish in different galaxies:

  • Savoury cream – onion, EVOO, salt, lemon. A sauce, savoury spread or soup base.
  • Sweet cream – honey or sugar, cinnamon, cloves, orange zest. A breakfast jam, tart filling, cheese-board star.

Same logic as not sweetening tomato sauce: same ingredient, different rules.

Sweet pumpkin cream – the recipe

Prep: 15 min · Cook: 30 min · Yield: about 400 g (2 small jars)

Ingredients

  • 800 g pumpkin flesh (Delica, Mantovana or tonda napoletana)
  • 100 g honey (wildflower or chestnut)
  • 30 g light brown sugar (optional, for extra sweetness)
  • 1 cinnamon stick
  • 3 cloves
  • Zest of ½ organic orange
  • Juice of ½ organic orange
  • Pinch of salt
  • 50 ml water

Method

  1. Prep the pumpkin. Peel, seed and cube into 2 cm pieces.
  2. Spice-bath simmer. In a saucepan combine pumpkin, water, honey, sugar (if using), cinnamon stick, cloves, orange zest strips, juice and salt.
  3. Gentle cook. Simmer 25–30 min, stirring now and then, until the pumpkin collapses and drinks up the liquid. Add a spoon of water only if it threatens to scorch.
  4. Fish out the aromatics – stick, cloves, zest.
  5. Blitz. Hand-blender for 1 min until silk-smooth.
  6. Tweak. Needs more sweetness? Stir in honey. Too sweet? A squeeze of orange. Too runny? Five more minutes uncovered to evaporate.
  7. Jar. Ladle into clean jars, cool, seal, refrigerate.

Secrets to a perfect sweet cream

Honey over sugar. Chestnut or wild-flower honey lends aroma, deeper colour and natural shelf-life. Extra sugar is optional—skip it if you love the clean taste of pumpkin.

Whole cinnamon. Resist ground unless you must; the stick perfumes delicately and leaves no dark freckles.

Organic orange zest. Use a peeler for wide strips of only the orange part—the white pith is bitter.

Dry pumpkin. Choose dense, low-water varieties (Delica, Butternut). Excess water dulls the spices; if yours is watery, finish uncovered over higher heat.

Twists on the theme

Pumpkin-spice latte cream

Add ½ tsp ground ginger, a grate of nutmeg and 1 tsp vanilla extract. Stir into coffee, latte or muffin batter.

Pumpkin butter

American-style, dairy-free “butter”. Use only 20 ml water and cook 40 min, stirring often, until thick like fruit cheese. Keeps longer; spreads like honey.

Cocoa swirl

Off the heat, beat in 2 Tbsp sifted dark cocoa. Turns into a glossy ganache-like dream on crêpes.

Almond crunch

Fold through 50 g roughly chopped toasted almonds. Breakfast luxury over Greek yogurt.

Festive rum

Stir in 1 Tbsp dark rum while warm. Alcohol evaporates, leaving winter warmth—perfect for Christmas cakes or stuffed panettone.

How to use sweet pumpkin cream

Far more versatile than you think:

  • Breakfast – on whole-grain toast or rusks, solo or topped with fresh ricotta.
  • Tart filling – spread over shortcrust, lattice top, autumn crostata in 15 min flat.
  • Layer cakes – sandwich between sponge for an impromptu tea cake.
  • Cheese board – a dollop beside aged pecorino, goat gouda or mild gorgonzola flips the platter.
  • Yogurt swirl – one spoon in Greek yogurt plus granola = 30-second breakfast.
  • Pancakes & waffles – swap for maple syrup.
  • No-bake cheesecake – beat into cream cheese for an autumn mousse.
  • Porridge booster – stir through hot oats for instant “pumpkin porridge”.
  • Roast side – a cheeky quenelle beside pork roast plays sweet-savoury beautifully.

Storage

Homemade sweet cream keeps 7–10 days in the fridge in clean, tightly-closed jars; veil the surface with honey for extra seal. Room-temp storage needs a 30-min water-bath at 90 °C—at that point trust an artisan jar instead.

Freezes perfectly for 3 months; thaw overnight and use within 3–4 days.

FAQ

Can I use frozen pumpkin?

Yes—thaw overnight, then squeeze out excess water. Flavour will be slightly lighter than fresh, in-season fruit.

Honey substitute?

Swap in 90–100 g light brown sugar. Slightly less aromatic, still delicious; raw cane sugar gives depth and colour.

Gluten-free? Vegan?

Naturally gluten-free. For 100% vegan replace honey with maple or agave syrup, same weight.

Do I need pectin?

No. This is a cooked cream, not a jam; it thickens by reduction, not gelification.

How many jars?

About 400 g finished product = 2 small 200 g jars or one 400 g jar.

When can I eat it?

Right away, warm or chilled. For gifting or longer keeping, rest 24 h in the fridge: spices mingle and flavours round out.
