What makes our jams artisan

  • No preservatives, added pectin or colourings. Just fruit, cane sugar and lemon juice. Natural setting comes from the cooking time, rather than additives.
  • Seasonal Italian fruit. Seasonal strawberries (May-June), white figs (August-September), blueberries (June), apricots (June-July). No out-of-season imported fruit.
  • Low-temperature vacuum cooking. Below 60°C, compared with 100°C for traditional saucepan cooking. Preserves the colour, aroma and texture of the fruit.
  • Autoclave sterilisation. Professional food safety, a perfect vacuum seal and none of the risks of home preserving.
  • 212 g glass retail jar with a twist-off lid. Once opened, refrigerate and consume within 20 days.

How to use them

For breakfast on toast, rusks, plain yoghurt and pancakes. In baking for tarts, cheesecake, biscuits and desserts. Paired with cheeses (goat's cheese, gorgonzola, buffalo ricotta) for sweet-savoury antipasti and finger food. See our recipes for inspiration.

Jam vs marmalade: the legal distinction

Under EC Regulation 2001/113, the term "marmalade" is reserved for citrus products (oranges, lemons, mandarins, citrons): find them in our collection of artisan citrus marmalades. For figs, strawberries, blueberries and apricots, the correct term is "jam" (extra if there is at least 50 g of fruit per 100 g of product, the threshold in force from 14 June 2026). Ours go well beyond this threshold: our strawberry jam starts with 74% fruit in the ingredients and, as cooking removes water, reaches 120 g of strawberries per 100 g of jam.

Frequently asked questions about artisan jams

What is the difference between jam, marmalade and fruit compote?

The distinction is the fruit, rather than the flavour. Under EU Directive 2024/1438, in force from 14 June 2026, a product must contain at least 450 g of fruit per kilo, and at least 500 g/kg for the Extra category. Marmalade remains associated with citrus fruit. Fruit compote has no equally precise legal definition and generally contains less sugar and more fruit.

How much fruit is in a Minnelea extra jam?

Between 66 and 130 g of fruit per 100 g of finished product, depending on the variety: above the legal minimum for the Extra category.

Do the jams contain pectin or preservatives?

No. The ingredients are fruit, cane sugar and lemon juice. No added pectin, thickeners, preservatives or colourings. The texture comes from cooking.

Is there a range with no added sugar?

No. All our sweet products contain cane sugar. The difference from industrial products is the high fruit content, rather than the absence of sugar.

What is low-temperature vacuum cooking?

The fruit cooks under vacuum, well below 100 °C. Compared with traditional open-pan cooking, colour, aroma and texture are better preserved because the fruit never reaches a full boil.

How much do the jams and shipping cost?

From 7,90 € to 8,90 € per 212 g jar, depending on the fruit. Free shipping in Italy on orders from 27 €, or 5 € below the threshold. In the EU countries we serve, standard shipping is free on orders from 35 €, or 7,90 € below the threshold. Any kit-specific conditions are shown on its page.

How long does an opened jam keep?

Three to four weeks in the fridge. Keep unopened jars in a cool place away from light, until the date shown on the label.

Are they suitable for vegetarians and vegans?

Yes. Fruit, cane sugar and lemon juice: no ingredients of animal origin and no gelatine.

Who makes Minnelea jams?

Azienda Agricola Minnelea, selling directly from the producer. Our Extra Fig Jam has received Great Taste and WineHunter Award Gold.
