The pumpkin & carrot soup is one of those recipes that works for a simple reason: two orange vegetables, two different kinds of sweetness, one colour that fills the bowl. Pumpkin gives body and a warm aroma; carrot adds an earthier note and an even brighter pigment. In this guide I’ll show you the right ratios, how to bring out the best in each vegetable, the most successful variations and how to achieve a long-simmered flavour starting from a jar of ready-made artisan pumpkin purée.
Why pair pumpkin and carrots?
Pile and carrot look alike but they aren’t. Pumpkin is sweet, soft, faintly fruity; carrot is sweet yet earthy, more compact, with a subtle bitter edge. Together they balance: carrot reins in pumpkin’s sweetness, pumpkin softens the texture carrots would have on their own.
There’s a practical bonus too: carrots cost little, are available year-round and let you “stretch” the recipe when pumpkin is scarce. Out of season, when squash isn’t at its peak, carrot covers and props up the flavour.
The right ratio
The rule is half pumpkin and half carrots for a balanced version, 2/3 pumpkin and 1/3 carrots if you want pumpkin to stay centre-stage. Avoid flipping the ratio: with more carrot than pumpkin the dish loses its identity and becomes carrot soup with a hint of squash.
For 4 servings: 500 g pumpkin + 500 g carrots (balanced) or 600 g pumpkin + 300 g carrots (pumpkin-centric).
Pumpkin & carrot soup: the recipe

Ingredients
- 500 g pumpkin flesh
- 500 g carrots
- 1 golden onion or 1 leek
- 3 Tbsp extra-virgin olive oil
- 700 ml vegetable stock
- Salt, black pepper
- Juice of ½ lemon
- 1 cm fresh ginger (optional)
- To serve: crostini, toasted pumpkin seeds, raw EVOO
Method
- Prep the veg. Scoop away skin, seeds and fibres from the pumpkin, dice into 2 cm cubes. Peel the carrots and slice into rounds of the same thickness.
- Sweat the aromatics. In a heavy-based pot soften the chopped onion in the oil over low heat for 4 min. If using ginger, grate it in now.
- Cook. Add pumpkin and carrots, stir for 2 min, cover with hot stock, season lightly. Bring to a gentle boil and simmer for 22-25 min until both vegetables collapse under a fork.
- Blend. Off the heat, add lemon juice and blitz with a stick blender for at least a minute until silky.
- Adjust. Thin with stock if too thick, simmer uncovered 5 min more if too thin.
- Serve. In steaming bowls, finish with a swirl of raw EVOO and toasted crostini.
Secrets for a flawless pumpkin & carrot soup
Seasonal carrots. Autumn and winter carrots are sweeter and more concentrated than summer ones. If you can, choose baby or heritage varieties (such as “Pariser Markt” or purple carrots): colour and flavour will soar.
Even sizing. Carrots and pumpkin cook at slightly different rates (carrots are denser). Dice them the same size and make carrot pieces a touch smaller so they finish together.
Ginger changes everything. One centimetre of fresh grated ginger is the difference between a “nice” soup and one people remember. It adds a fragrant heat that marries the combined sweetness.
Lemon at the end. Always raw, after blending. It balances the double sweetness (pumpkin + carrot) and perks up the orange hue.
Winning variations
With turmeric & ginger
The “spiced” version. Stir 1 tsp ground turmeric into the sauté along with the grated ginger. The colour turns almost fluorescent and the flavour becomes warm and aromatic—perfect on cold days.
With coconut milk
Creamy and vegan. Swap 200 ml stock for 200 ml coconut milk. The soup gains roundness and a tropical note. Lovely with a pinch of red curry if you enjoy contrast.
With orange
Replace the lemon juice and zest with the juice and zest of ½ organic orange. The pumpkin-carrot-orange trio is a Nordic classic: citrus perfume, triple sweetness, spectacular colour.
With sweet potato instead of pumpkin
Out of season, when squash is lacklustre, swap half the pumpkin for sweet potato. Flavour is similar but texture becomes even silkier thanks to the potato’s starch.
With red lentils
Protein boost. Add 100 g split red lentils with the stock: they cook in 20 min and dissolve completely, turning the soup into a hearty one-pot meal.
How to serve it
Pumpkin & carrot soup is photogenic as is, but a few details make it look restaurant-plated:
- Dots of Greek yogurt piped in a ring at the centre—white on orange.
- Toasted pumpkin seeds tossed in a dry pan for 2 min.
- Garlic-rubbed crostini brushed with oil.
- Crisp-fried sage leaves for 30 s in hot oil—aromatic crunch.
- Rosemary-infused oil drizzled raw—perfumes the last spoonful.
- A tiny spoonful of green pesto on top—sharp colour contrast.
Storing
In an airtight container in the fridge, 3-4 days. Freezes perfectly (up to 3 months) in portions. Thaw overnight in the fridge and reheat gently, stirring.
The shortcut: 15-minute pumpkin & carrot soup
If you keep a jar of artisan pumpkin purée in the pantry, you can have pumpkin & carrot soup in minutes.
- Simmer 400 g sliced carrots in stock or salted water for 12-15 min until tender.

FAQ
Can I use old or floppy carrots?
Yes, just peel them well. Older carrots are often sweeter because their sugars have concentrated. If they’re limp, soak them in cold water for 10 min before peeling.
Do I need potato to thicken?
No. Carrots contain enough natural starch to give body. If you want extra density, add a small waxy potato.
Can I skip the onion?
Yes, swap it for the white part of a leek for a milder note, or a shallot for something more refined.
Is it baby-friendly?
Ideal for weaning: pumpkin and carrot are among the first vegetables offered to infants. For very young children, omit lemon and ginger.
How many calories?
