For a perfectly balanced one-bowl meal: 500 g pumpkin + 400 g cooked chickpeas (or 150 g dried chickpeas, soaked and boiled).
More pumpkin and fewer chickpeas gives you a sweet soup with little protein; flip the ratio and the pumpkin disappears into a chickpea cream with a hint of squash. Five-to-four is the sweet spot.
Pumpkin & chickpea cream: the recipe

Ingredients
- 500 g pumpkin flesh
- 400 g cooked chickpeas (or one 400 g tin, drained)
- 1 golden onion
- 1 garlic clove
- 1 small sprig fresh rosemary
- 4 Tbsp extra-virgin olive oil
- 700 ml vegetable stock
- Salt, black pepper, paprika (optional)
- Juice of ½ lemon
- To serve: crostini, toasted chickpeas, raw oil
Method
- Prep the pumpkin. Peel, seed and string, then dice into 2 cm cubes.
- Make the soffritto. In a heavy-based pot, gently fry the chopped onion and whole garlic clove in the oil for 4 min over low heat. Add the rosemary: it will perfume the entire dish.
- Cook the pumpkin. Tip in the cubes, stir 2 min, cover with stock. Bring to a boil, lower to a simmer, lid on, 20 min or until the pumpkin collapses.
- Add the chickpeas. Reserve 2–3 Tbsp whole chickpeas for garnish. Stir the rest into the pot, simmer 5 min more.
- Remove rosemary and garlic, season with salt, add the lemon juice.
- Blend. Blitz with a stick blender for a good full minute until silk-smooth and thick.
- Serve. Ladle into steaming bowls, top with the reserved chickpeas, a swirl of raw EVOO, a dusting of paprika, a crack of pepper and crostini.
Secrets of ultimate creaminess
Truly tender chickpeas. If starting from dried, soak 12 h and simmer at least 90 min (pressure cooker 30–40 min). Under-cooked chickpeas never blend silky. If using tinned, choose a premium brand with whole, soft beans.
Rosemary in the pot. Add the whole sprig while cooking and fish it out before blending. This perfumes the soup without leaving woody needles in your cream.
Long blend. A full 60–90 seconds. Chickpeas need more time than pumpkin to turn velvety. For restaurant texture, pass through a fine sieve after blending.
Last-minute lemon. It lifts the pumpkin’s sweetness and brightens the earthy chickpeas. Always add at the end, never during cooking.
Twists on pumpkin & chickpea cream
With smoked paprika
A bolder bowl. Stir a teaspoon of smoked paprika into the soffritto: the smoky note plays against the pumpkin’ sweetness, creating an almost Mediterranean-Nordic vibe.
With cumin & lemon
Middle-Eeast style. Add a teaspoon of ground cumin and the zest of an organic lemon at the end. Serve sprinkled with black sesame and a spoon of tahini. Think drinkable hummus—irresistible.
With curry & coconut milk
Tropical comfort. Fry a teaspoon of mild curry powder in the oil, then swap half the stock for 200 ml coconut milk. The soup gains a lush, exotic creaminess that loves both pumpkin and chickpeas.

Dried, soaked and simmered have deeper flavour, but need 12 h soaking + 90 min cooking. Premium tinned chickpeas are perfect for a speedy version. Rinse them well to remove the preserving liquid.
Can I skip onion & garlic?
Yes, for low-FODMAP diets. Replace with the white part of a leek and ½ tsp asafoetida for depth.
Is it really a complete meal?
