How to make the master sauce
Every recipe begins with a ready pumpkin cream. If you make it at home, follow our complete guide. In short: round Neapolitan or Delica squash, EVOO, golden onion, salt, lemon juice. Twenty-five minutes, blitz, thick but pourable.
The golden ratio is 150 g pumpkin cream per 100 g pasta. One Minnelea jar (212 g) feeds two generously.
The toss-to-gloss trick
Drain the pasta al dente and keep a ladle of cooking water. Warm the pumpkin cream in a pan over medium heat, loosen it with two or three spoonfuls of starchy water, add the pasta and toss hard for one minute. The starch binds the sauce to every ridge and gives the glossy film that separates restaurant plates from “thrown-together” suppers.
1. Pumpkin cream pasta with speck
The most-googled version. Smoky speck balances the squash’s sweetness without masking it.
Ingredients for 2:
- 200 g short pasta (mezze maniche, penne, sedani)
- 300 g pumpkin cream
- 80 g speck cut into matchsticks
- ½ golden onion
- Extra-virgin olive oil, black pepper, grated Parmigiano
Method: soften the chopped onion in a slick of oil, add the speck and crisp for 2–3 min. Reserve half the speck for garnish. Stir in the pumpkin cream, warm it, add the drained pasta with a splash of cooking water and toss. Plate, top with the reserved crunchy speck, a twist of pepper and a snow of Parmigiano.
\n2. Pumpkin cream pasta with sausage
Hearty, Sunday-friendly. Crumbled sausage releases its savoury fat straight into the sauce.
Ingredients for 2:
- 200 g pasta (paccheri, rigatoni)
- 300 g pumpkin cream
- 150 g fresh sausage
- 1 garlic clove, rosemary, white wine
Method: brown the garlic in its skin and a rosemary sprig, add skinned, crumbled sausage and fry 5 min. Deglaze with ½ glass of wine and let it evaporate. Stir in the pumpkin cream, add the pasta with cooking water and toss. Finish with black pepper and a grating of pecorino.
3. Pumpkin cream pasta with guanciale
For carbonara-lovers who want a twist. Crisp guanciale on sweet purée turns a family dish into restaurant fare.
Ingredients for 2:
- 200 g tonnarelli or rigatoni
- 300 g pumpkin cream
- 100 g guanciale cut into matchsticks
- Cracked black pepper, Pecorino Romano
Method: place guanciale in a cold dry pan and render slowly until golden and crisp. Pour off excess fat, add the pumpkin cream (plus a spoon of the guanciale fat), warm, add the pasta with cooking water. Toss, plate, blanket with crispy guanciale, fresh pepper and Pecorino Romano.
4. Pumpkin cream pasta with pancetta
A softer, gentler take. Sweet pancetta melts into the sauce, making it round and kid-friendly.
Ingredients for 2:
- 200 g penne or fusilli
- 300 g pumpkin cream
- 100 g sweet pancetta cubes
- 1 shallot, fresh thyme
Method: sweat the minced shallot, add pancetta and colour 4–5 min. Stir in the pumpkin cream and a few thyme leaves, warm. Add al-dente pasta and cooking water, toss. Finish with a grind of pepper.
5. Pumpkin cream pasta with Parmigiano
The vegetarian classic—perhaps the finest when the squash is top quality. 24-month Parmigiano brings a salty, dried-fruit note that lifts the sweetness.
Ingredients for 2:
- 200 g long pasta (linguine, tagliatelle)
- 300 g pumpkin cream
- 60 g 24-month Parmigiano Reggiano, grated
- EVOO, black pepper, a few sage leaves
Method: fry sage leaves in hot oil for 30 s (the oil perfumes). Remove and reserve. Add the pumpkin cream to the pan, warm, add the pasta with cooking water. Off the heat, toss in the cheese (this prevents clumping). Plate with the fried sage, pepper and a raw-oil drizzle.
6. Pumpkin cream pasta with prawns
The seaside, dress-up version. Quickly seared prawns stay juicy and contrast the velvet sauce.
Ingredients for 2:
- 200 g paccheri or mezze maniche
- 300 g pumpkin cream
- 250 g shelled fresh prawns
- 1 garlic clove, parsley, chilli
Method: sauté prawns with garlic in its skin and a pinch of chilli for 2 min only. Set aside. Warm the pumpkin cream in the same pan, add the pasta with cooking water, toss. Return the prawns, scatter chopped parsley, a thread of oil. No cheese.
7. Pumpkin cream pasta with Philadelphia
The silkiest of the lot. The spreadable cheese melts into a vegetable béchamel kids devour.
Ingredients for 2:
- 200 g short pasta
- 300 g pumpkin cream
- 80 g cream cheese (Philadelphia style)
- Nutmeg, pepper, snipped chives
Method: warm the pumpkin cream, whisk in the cheese until melted. Add a grate of nutmeg. Add al-dente pasta and cooking water, toss. Plate with chives and pepper.
The shortcut: five-minute pumpkin pasta

Pumpkin cream is friendly to almost any cut, but some matches are magic.
- Long pasta (linguine, tagliatelle, pappardelle) — best for delicate versions: Parmigiano, Philadelphia, pancetta.

FAQ
Can I make the dish ahead?
The cream yes, the tossed pasta no. Make the cream the day before and chill. Reheat, then toss with freshly cooked pasta. Pre-tossed pasta drinks up the sauce and dries out.
Is Parmigiano obligatory?
Depends on the partner. Smoked meats (speck, guanciale, pancetta) and vegetarian versions love Parmigiano or pecorino. With seafood (prawns, salmon) the Italian rule is no cheese.
How much pumpkin cream per person?
About 130–150 g cream per 100 g pasta. So 80 g pasta needs 100–120 g cream. One 212 g jar covers two generous portions.
