Soft Jam-Filled Biscuits

Soft biscuits with a well of jam in the middle: more tender than classic shortcrust, and they stay soft for days. Ridiculously easy to make.

Method

  1. Cream the soft butter (or the oil) with the sugar, then beat in the egg.
  2. Add the flour, the baking powder, the lemon zest and the milk (or yogurt) until you have a soft but workable dough.
  3. Roll the dough into balls and set them on the baking tray, well spaced.
  4. Press the centre of each ball with a finger or the back of a teaspoon to make a hollow.
  5. Fill each hollow with a little jam.
  6. Bake at 175°C (350°F) for 12-15 minutes: they should stay pale and soft. Leave to cool.
