Minnelea's Apricot Extra Jam is born from apricots grown in the sun-drenched lands of Cilento. The harvest takes place at the moment of full ripeness, when the fruit expresses its natural sweetness and unmistakable aroma at their best.

It's a jam that's simple in recipe and direct in taste: Mediterranean sun concentrated in a jar, without forcing.

Essential recipe, 130% concentration

For each jar we use 130 g of apricots to obtain 100 g of finished jam. The fruit loses water during cooking and what remains in the jar is the concentrated part: full aroma, soft structure, natural sweetness.

Apricots at 70%, cane sugar at 29%, lemon juice at 1% to enhance the flavour and for natural preservation. No pectin, no thickeners, no preservatives, no colourings.

Vacuum cooking at low temperature

Like our other sweet jams, apricots are processed by vacuum cooking at low temperature. A slow method, chosen to keep the bright colour, fresh aroma and soft consistency of the fruit.

The result is a golden orange jam, velvety, balanced in sweetness.

How to use it

Perfect on whole grain bread for breakfast or in Greek yogurt. Among cheese pairings it shines with fresh ricotta or soft cheeses. In pastry it works for tarts, filled biscuits and traditional desserts.

Metodo di lavorazione

Lavorazione artigianale in piccoli lotti, invaso a caldo nel vasetto di vetro per preservare aroma e colore. Niente conservanti, niente addensanti.

  • Apricot tart — On a shortcrust pastry base with a generous layer of jam. The classic dessert, made with an honest ingredient.

The product

Cilento apricots, harvested ripe.

Apricots are grown in the sun-drenched lands of Cilento and harvested at the right moment: when the pulp is soft but still firm, and the aroma is the full one of natural ripeness. It's the Mediterranean sun that does the work: it concentrates the sweetness and brings out the aroma.

In the workshop we combine only the apricots, cane sugar and a touch of lemon juice. Vacuum cooking, slow, at low temperature. The density comes from time, not from thickeners.

How this jam is made

Three essential steps, no shortcuts.

  1. Harvest at full ripeness

    Cilento apricots hand-picked at full ripeness, when the sweetness is natural and the aroma intense.

  2. Vacuum cooking

    Vacuum processing, at low temperature, with cane sugar and a touch of lemon juice. No pectin: density comes from time.

  3. Hot filling

    Hot-filled into the glass jar for natural preservation, with no added preservatives.
