Minnelea's Strawberry Extra Jam is born from selected strawberries, hand-picked from a small Cilento farm. The harvest moment is chosen to guarantee full colour, fruit integrity and natural sweetness, without forcing.

It's a jam that's simple in recipe and storytelling: only strawberries, cane sugar and careful processing. No decorations, no compromises.

50/50 recipe, 130% concentration

For each jar we use 130 g of strawberries to obtain 100 g of finished jam. The fruit loses water during cooking and what remains is the concentrated part: full aroma, soft structure, clean sweetness.

Final recipe: 50% strawberries and 50% cane sugar. No pectin, no thickeners, no preservatives, no colourings. The consistency comes from cooking time, not from additives.

Vacuum cooking at low temperature

Like our other sweet jams, the strawberries are processed by vacuum cooking at low temperature. A slow method, chosen to preserve the bright colour, fresh aroma and soft consistency.

The result is a deep red jam, velvety, balanced in sweetness — designed for those who look for the taste of the strawberry, not an industrial substitute.

How to use it

Perfect on toasted bread for breakfast, on rusks, pancakes or crêpes. In pastry it works for tarts, cheesecake and spoon desserts. Among sweet pairings it shines with plain yogurt, vanilla ice cream and panna cotta, where the strawberry's sweetness meets a neutral base that brings it out.

Lavorazione artigianale in piccoli lotti, invaso a caldo nel vasetto di vetro per preservare aroma e colore. Niente conservanti, niente addensanti.

  • Strawberry tart — On a shortcrust pastry base with a generous layer of jam. A tart with fruity, elegantly sweet flavour, never heavy.
  • Yogurt and ice cream — A spoonful in plain yogurt at breakfast, or on a scoop of vanilla ice cream. The strawberry does its job: brings colour, fragrance, contrast.
  • Panna cotta or cheesecake — As a finishing on panna cotta or cheesecake. The fruity note completes the creamy part of the dessert and lightens its structure.

The product

Hand-picked strawberries, round taste.

The strawberries are hand-picked from a small Cilento farm, at the moment when the colour is full and the fruit is intact. We don't look for the perfect strawberry in shape, but the one that has flavour: ripe, fragrant, real.

In the workshop we combine only strawberries and cane sugar. Vacuum cooking, slow, at low temperature. The density comes from time, not from thickeners. The result is a soft, velvety jam, faithful to the natural taste of the fruit.

How this jam is made

Three essential steps, no shortcuts.

  1. Hand-picked

    Strawberries hand-picked from a local farm, at the moment of peak ripeness. It's the starting point: fresh, intact, recognisable raw material.

  2. Vacuum cooking

    Processing happens under vacuum, at low temperature. A slow cooking that protects the colour, aroma and natural consistency of the fruit.

  3. Density without shortcuts

    The structure comes from time and from the balance of the recipe. No pectin, no thickeners: the jam stays faithful to the strawberry, without weighing down the taste.
