Method

  1. Choose 3-4 cheeses of different textures (a fresh one, a semi-aged one, an aged one and a blue) and take them out of the fridge at least 30 minutes before serving: at room temperature they give far more aroma and creaminess.
  2. Lay the cheeses out on the board with space between them, from the mildest to the strongest, working clockwise.
  3. Add two small bowls of jam: the fig jam next to the gorgonzola and the aged cheeses, the black blueberry jam next to the brie or the camembert. The sweetness of the fruit balances salt and richness.
  4. Finish with nuts, a thread of honey and bread or grissini. For an extra savoury note, add a few preserves in oil or a spoonful of sun-dried tomato paté.
  5. Serve the board at room temperature with a good wine. Invite your guests to match each cheese with its own jam.
