The ketogenic diet involves a very low intake of carbohydrates — typically under 20-50 g per day — to lead the body to produce ketone bodies as an alternative energy source to glucose. In this context, jams and marmalades are among the foods to be analyzed carefully.

The problem of carbohydrates in jams

A standard artisan jam typically contains 50-65 g of carbohydrates per 100 g. Even a small portion of 15-20 g provides 8-12 g of carbohydrates. In a classic ketogenic regime with a limit of 20-25 g/day, a single portion of traditional jam would take up approximately half of the carbohydrate budget for the entire day. Traditional jams are not compatible with a strict keto approach.

Fructose and ketosis

In jams the sugars derive both from fruit (fructose and glucose) and from added sugar (sucrose, which breaks down into glucose and fructose). Fructose is metabolized almost exclusively by the liver and can interfere with the maintenance of ketosis if consumed in excess. It still contributes to the total carbohydrate pool.

Figs are among the fruits with the highest natural sugar content — around 15-20 g per 100 g when fresh. Once transformed into jam, the concentration increases due to evaporation during cooking. An artisanal Cilento fig jam has an extraordinarily rich and sweet aromatic profile, but is among the options with the highest carbohydrate content in the jam panorama. It is not a product for those following keto.

Keto-friendly alternatives to traditional jams

For those following the ketogenic diet there are some alternatives:

  • Jams with sweeteners: erythritol, xylitol or stevia instead of sucrose; effective carbohydrates are drastically reduced
  • Sugar-free berry jams: only fruits with low sugar and pectin content
  • DIY keto recipes: fresh blackberries or raspberries with erythritol; allow you to precisely control the composition

These alternatives have a very different profile compared to a traditional artisanal jam in terms of taste, consistency and shelf life.

Conclusion

Traditional artisanal jams are not compatible with a strict ketogenic diet. Keto-friendly alternatives exist but they have different organoleptic characteristics. Awareness of nutritional composition is the starting point for any informed food choice.
