The main culprits behind EVO oil’s decline are light, heat, and oxygen. A premium oil, once opened and poorly stored, loses its fragrant compounds, turns rancid, and sheds its organoleptic soul. The ideal format is the one that keeps these three foes at bay.
Dark glass bottle (250–750 ml)
The signature vessel for artisanal oils. Tinted glass shields the liquid from light, is chemically neutral, and lets you see exactly how much treasure is left.
The 250–500 ml size suits moderate use; the 750 ml is the sweet spot for daily family cooking.
Limitation: once uncorked, the headspace fills with air and the clock starts ticking. Aim to finish it within 4–6 weeks.
