No-bake cheesecake with black blueberry jam

The cold cheesecake is the dessert anyone can make and almost no one gets wrong: no oven, no water bath, no cracks on the surface. Three layers — biscuit base, cream cheese filling, fruit topping — and you're done.

The topping is where everything is decided. With black blueberry jam you get a dark purple that cuts through the white cream and a sharp note that lightens a dessert which would otherwise risk feeling heavy. If you prefer a sweeter, more classic fruit, there's also the version with strawberry jam. Here we go dark.

Ingredients (20 cm tin, 8 slices)

Base

  • 200 g plain biscuits (digestive type)
  • 90 g melted butter

Filling

  • 400 g cream cheese
  • 200 ml whipping cream
  • 80 g icing sugar
  • 8 g gelatine leaves
  • 1 tsp vanilla extract

Topping

  • 4–5 tbsp black blueberry jam

Time: 25 minutes prep, 4 hours in the fridge.

Method

  1. Base. Crush the biscuits finely and mix with the melted butter. Press the mixture onto the bottom of a springform tin, compacting well with the back of a spoon. Into the fridge while you make the filling.
  2. Gelatine. Soak the gelatine leaves in cold water for 10 minutes. Squeeze them out and dissolve in two spoonfuls of warmed cream (not boiling).
  3. Filling. Beat the cream cheese with the icing sugar and vanilla. Fold in the cream, whipped separately, working from the bottom up so it doesn't deflate. Stir in the dissolved gelatine and mix well.
  4. Assembly. Pour the filling over the base, level it, and return to the fridge for at least 4 hours (overnight is better).
  5. Topping. Once the cheesecake is firm, spread the black blueberry jam in an even layer. At room temperature it stays thick and shows the fruit; for a mirror effect, warm it for 30 seconds with a teaspoon of water, then pour.

The detail that makes the difference

The topping goes on last, not while the cream is still soft. If you spread it too early, the blueberry sinks and you lose the sharp contrast between white and dark. Wait until the cheesecake is set, then top it: when sliced, it shows three clean layers.

For single portions, forget the big tin: use glasses. Crumbled base at the bottom, cream, a spoonful of jam on top. They're the quickest spoon desserts there are and they make their impression at the end of dinner.

Pairings and variations

The sharp note of black blueberry welcomes something crunchy alongside: a handful of toasted flaked almonds on the topping, or some chopped hazelnuts on the base. In winter, a grating of lemon zest in the cream brightens everything.

If you like dark fruit, it's worth trying the same recipe with berry jam — a blend of blueberries, raspberries, blackberries and redcurrants — for a more layered topping. You'll find both among our jams.

Why black blueberry in a cheesecake

The most common cheesecake toppings — strawberry, sweet red fruits — go in the same direction as the cream: sweet on sweet. Black blueberry does the opposite. Its light acidity acts as a counterweight, the way lemon juice does in so many preparations. It's the reason a blueberry cheesecake "tires" you less by the second slice.

Our jam is made with whole black blueberries, cane sugar and lemon juice, with no added pectin or colourings. The dark colour of the topping is the natural shade of the fruit.

Frequently asked questions

Can I make the cheesecake without gelatine?
Gelatine gives the no-bake version its typical set. Without it, the cream stays soft: you can still serve it as a spoon dessert in glasses, but it won't hold a clean slice.

How much jam do I need for the topping?
For a 20 cm tin, count on 4–5 tablespoons, about half a 212 g jar. If you want it more generous, a whole jar.

Can I make it the day before?
Yes, in fact it's better. The cream sets better with a night in the fridge. Add the jam topping just before serving to keep the colour contrast.

Does it work with light cream cheese?
It works, but the cream is less structured. In that case, increase the gelatine slightly (1–2 g).
