Fig confettura is one of those staples Italians know from childhood. Most of us file it under breakfast — a crisp biscuit, a generous spoonful, done. But real fig confettura, made with whole fruit and without industrial pectins, can do things a biscuit will never confess.

1. With aged cheeses: the quintessential Italian pairing

Figs and aged cheese is an age-old Italian love story. The sweetness of the fig balances the bold bite of a mature pecorino, a long-aged Parmigiano, or a stravecchio grana. It also dances beautifully with blues — think sweet gorgonzola or any creamy erborinato.

On a cheese board: a shard of pecorino, a slice of Parmigiano, a wedge of blue. Beside them, a small bowl with two spoonfuls of fig confettura. Let every guest build their own bite. Rustic bread or whole-wheat crackers on the side.

2. On roast meat: the sauce that changes the dish

A Northern Italian secret: serve fig confettura with roast meats, especially pork and game. The fig’s sweetness cuts through the richness of the meat and completes the plate without ever masking it.

Simple version: roast a pork loin in the oven with rosemary and extra-virgin olive oil. When it’s ready, melt two spoonfuls of fig confettura into the pan juices with half a glass of stock. Stir for a minute over low heat, then spoon over sliced meat.

Works just as well with roast duck, guinea fowl, or rabbit.

3. In a short-crust tart: the classic

A jam tart is the simplest Italian dessert there is. Line a tart ring with sweet short-crust, spread half a jar of fig confettura evenly, lattice the top with pastry strips, and bake at 180 °C for thirty-five minutes.

Fig confettura holds up better than most jams — it won’t run or weep. It stays dense and flavourful.

Richer twist: add a little grated lemon zest to the pastry and a veil of chopped almonds over the confettura before the lattice goes on.

4. On a crostino with prosciutto: the lightning-fast aperitivo

An Italian board classic: toasted bread, a whisper of fig confettura, a slice of prosciutto crudo, a twist of black pepper. Three ingredients, ten seconds of work, a flavour that opens the meal.

Works equally well with bresaola, speck, or culatello. The rule never changes: the fig’s sweetness balances the salume’s savour.

White Dottato figs: what they are

White Dottato figs are a southern Italian variety, especially common in parts of the inland south. The skin is pale green-yellow, the flesh sweet and firm with few seeds.

It’s the variety most chosen for artisan confettura because the pulp keeps its structure during cooking. It’s not a DOP certification — it’s a botanical cultivar selected for its sensory qualities.

Storage

Once opened, keep the jar in the fridge. It will stay perfect for four to six weeks. Always use a clean spoon — never dip a used knife into the jar.
