Pumpkin & Potato Soup: The Perfect Creamy Velouté

The pumpkin & potato soup is the velouté that makes everyone happy. Sweet enough thanks to the pumpkin, round and velvety thanks to the potatoes, scented by extra-virgin olive oil: it’s one of those dishes that truly warm you up when it’s cold outside, and never tires the palate because its flavour is clean, recognisable, honest.

In this guide you’ll find the original recipe, the right ratio between pumpkin and potatoes, the tricks for perfect texture and a few variations to personalise it. If you’d rather skip the cooking, at the end we explain how to obtain the same result starting from a jar of artisan pumpkin cream.

Why pair pumpkin and potatoes

Pumpkin on its own, especially if it’s a very watery variety, tends to give a “light” cream that struggles to stay compact on the plate. Potatoes solve the problem: their starch binds the liquids, thickens the preparation and adds that enveloping softness that makes the soup creamy in the real sense, not just puréed.

There is also a flavour reason: pumpkin is sweet, potato is neutral and slightly earthy. The combination creates a balance that pumpkin alone never reaches, and makes the dish suitable even for those who don’t particularly like the sweet taste of pumpkin.

The right proportion

The rule is 2/3 pumpkin and 1/3 potatoes. This way the pumpkin remains the star — in colour and taste — and the potato does its aromatic thickening job without taking over.

In numbers: 600 g of pumpkin flesh + 300 g of potatoes for 4 generous portions. If you increase the potatoes the soup becomes heavier and changes character, moving towards a mash; if you reduce them too much you get a liquid soup.

Pumpkin & potato soup: the original recipe

Preparation time: 15 minutes · Cooking: 25 minutes · Serves: 4

Ingredients

  • 600 g pumpkin flesh (round Neapolitan, Delica or Mantovana)
  • 300 g yellow-fleshed potatoes
  • 1 golden onion
  • 1 clove of garlic (optional)
  • 4 tablespoons extra-virgin olive oil
  • 700 ml vegetable stock (or water)
  • Salt, black pepper, nutmeg
  • Juice of half a lemon
  • To serve: bread crostini, raw EVO, toasted pumpkin seeds

Method

  1. Prep the vegetables. Halve the pumpkin, remove seeds and fibres, peel and dice into 2 cm cubes. Peel the potatoes and cut them the same size (so they cook evenly).
  2. Sweat the aromatics. In a heavy-based pot, soften the chopped onion in 3 tablespoons of oil over low heat for 4–5 minutes. If using garlic, add it in its skin and remove before blending.
  3. Cook the vegetables. Add pumpkin and potatoes to the pot, stir for 2 minutes. Cover with hot vegetable stock, season lightly, add a grate of nutmeg.
  4. Simmer. Bring to the boil, lower the heat and cook gently for 20–25 minutes, until pumpkin and potatoes collapse at the touch of a fork.
  5. Blend. Off the heat, add the lemon juice and the remaining spoon of oil. Blend with an immersion blender for at least one minute, until perfectly smooth.
  6. Adjust texture. If too thick, add a ladle of hot stock; if too thin, return to the heat for 5 minutes uncovered.
  7. Serve. In steaming bowls, with a thread of raw EVO, toasted bread crostini and a few pumpkin seeds.

The secrets of perfect texture

Right potatoes. Use yellow-fleshed potatoes (Agata, Monalisa, Spunta types). White-fleshed ones release more starch and turn “gluey”. Red-skinned hold their shape but don’t bind.

Lid on. The lid keeps the water inside and prevents the pumpkin from drying out. When you blend, the cooking water becomes the vehicle that brings the soup to a velvety consistency. Without the lid everything evaporates and you end up with a dry purée.

Long blending. One minute with the blender is the minimum. If you want restaurant-grade soup, blend for a good two minutes and then pass through a fine sieve: it removes every residue and gives a silky texture.

Lemon at the end. The juice of half a lemon seems little, but it changes everything. It balances the sweetness of the pumpkin and lifts the fruity note of the oil. Add it after taking the pot off the heat, never during cooking.

Variations on pumpkin & potato soup

With rosemary & garlic

Rustic Tuscan version. Add two sprigs of fresh rosemary to the soffritto and a whole garlic clove. Remove rosemary and garlic before blending. Finish with coarsely ground black pepper and garlic-oil crostini.

With fresh ginger

Modern twist. Grate 2 cm of fresh ginger into the soffritto and a pinch of turmeric for colour. It balances sweetness with a spicy, fragrant note. Great in the coldest months.

With leeks instead of onion

Milder and sweeter flavour. Replace the onion with one whole leek finely sliced (white part only). The soup gains roundness and a spring-like perfume even in winter.

With coconut milk

Creamy vegan version. Replace 200 ml of stock with 200 ml light coconut milk. Add a pinch of curry for a surprisingly good fusion twist.

With chestnuts

Richer autumn version. Add 100 g peeled, cooked chestnuts at the end and blend everything together. The soup becomes denser, with a sweet starchy note reminiscent of Apennine valley cooking.

How to serve it

Pumpkin & potato soup looks good on the plate even without frills. Some pairings that always work:

  • Toasted bread crostini — the most classic, especially if the bread is rustic and rubbed with garlic.
  • Toasted pumpkin seeds — crunch and decoration in one go.
  • Raw EVO drizzle — non-negotiable, it makes the difference.
  • Parmesan shavings — for a more substantial version.
  • Crumbled crispy pancetta — for the non-vegetarians.
  • Drops of sour cream or Greek yogurt — they create an interesting acidity contrast.
  • Smoked paprika powder — a dusting on the rim of the bowl for effect.

How to store it

In the fridge, in an airtight container, it keeps 3–4 days. Re-heat gently, stirring, and add a splash of stock if it has thickened too much.

It freezes beautifully. Portion it into freezer trays or flattened bags (they take less space), label with the date, keep up to 3 months. Thaw overnight in the fridge, re-heat gently while stirring often.

The shortcut: pumpkin & potato soup in 10 minutes

If you already have a jar of artisan pumpkin cream in the pantry, you can make pumpkin & potato soup without cooking the pumpkin from scratch.

Method:

  1. Simmer 300 g diced potatoes in salted water or vegetable stock for 15 minutes.
  2. At the end add the contents of one jar of Minnelea pumpkin cream (212 g).
  3. Blend everything with an immersion blender, adjust salt, add a drizzle of oil and a squeeze of lemon.
  4. Serve as the classic version.

Result: a pumpkin & potato soup ready in under twenty minutes, with the flavour of an artisan preparation.

FAQ

Better pumpkin or potatoes as the main ingredient?

In this recipe the pumpkin is the star and the potatoes support it. If you invert the proportions you get a potato cream lightly flavoured with pumpkin, a different dish. Stick to 2/3 – 1/3.

Can I use already-boiled potatoes or leftovers?

Yes, it works perfectly for the quick version. Add the boiled potatoes at the end, together with the cooked pumpkin, blend and re-heat.

The soup is too thick, how do I fix it?

Add a ladle of hot vegetable stock or water and blend again. Never use cold water or the soup “cuts” the temperature and loses creaminess.

Can I make it without potatoes?

Yes, but then you need other thickeners: a tablespoon of rice boiled with the pumpkin, or a sweet potato, or a handful of white beans. The potato is the most neutral way to bind the soup.

How long does homemade pumpkin & potato soup keep?

3–4 days in the fridge in an airtight container, up to 3 months in the freezer. We recommend freezing it in portions so you thaw only what you need.

Is it suitable for weaning?

Yes, it’s one of the first textures paediatricians suggest: sweet, soft, digestible. If you prepare it for a small child, skip the lemon and reduce the onion.
