Grilled Vegetables Recipe: The 4 Marinades That Change Everything

Grilled vegetables rarely fail at the grill — they fail at the marinade. Brush zucchini with nothing but oil and you’ll get hot zucchini; lay it, post-grill, in lemon, garlic and herbs and you’ll get a dish. Which Vegetables Belong on the Grill

First league (straight on the grill): zucchini (lengthwise slices, 5 mm), peppers (quartered), aubergines (slices, 1 cm), red onions (thick rings), mushrooms, cherry tomatoes on the vine, asparagus, spring onions.

Needs a head-start: fennel and potatoes (par-boil), corn cobs (pre-cook or wrap in foil).

Better not: leafy greens (they burn), cucumber and anything that’s more than 95 % water.

The Before/After Rule

The key principle almost no one knows: oil before, acid and salt after.

  • Before (10 minutes): olive oil plus dry aromatics — garlic, dried herbs, pepper. Oil conducts heat and prevents sticking.
  • After (while the veg is still hot): acid (lemon, vinegar), salt, fresh herbs. Hot vegetables drink in the marinade like a sponge — the same mechanism as with our marinated zucchini.

Add acid too early and you tan the surface; salt too early and you draw out water so the veg steams instead of roasting.

The 4 Marinades (each for 1 kg vegetables)

1. The Italian (Lemon-Oregano): 6 tbsp olive oil, juice of half a lemon, 1 tsp oregano, 1 minced garlic clove, salt. The all-rounder — goes with everything, tastes like southern Italy.

2. The Sweet (Honey-Mustard-Thyme): 4 tbsp olive oil, 1 tbsp honey, 1 tsp mustard, thyme. For onions, carrots and anything that loves to caramelise.

3. The Fiery (Chilli-Garlic): 6 tbsp olive oil, chilli flakes, 2 garlic cloves, a splash of red-wine vinegar. For peppers and aubergines — pure Calabria mood.

4. The Fresh (Mint-Balsamic): 5 tbsp olive oil, 2 tbsp light balsamic, fresh mint, salt. The scapece school — born for zucchini.

From Grill to Jar: the Sottoli Idea

Grilled, marinated vegetables keep for three days covered in the fridge and get better every day — so Sunday’s grill becomes antipasti until Wednesday. Italian tradition has perfected and preserved this principle: sott’olio, grilled or blanched vegetables under olive oil. A jar of peppers in olive oil is conceptually the same thing — grilled veg with marinade No. 1, made by someone who’s been doing it for generations. For winter, when the grill sleeps.

FAQs

Basket, skewer or straight on the grate? Straight on the grate for char stripes (cut large pieces!), basket for small pieces, skewers for looks. Foil trays only for the delicate — they steam more than they grill.

How long does veg take on the grill? Zucchini and aubergines 3–4 minutes per side, peppers 5–6, onion rings 4–5. Better hot and quick than lukewarm and long.

Can I prep grilled vegetables ahead? Slice and oil: yes, hours ahead. Grill: fresh. Marinate: after grilling — and leftovers make the world’s best panino filling the next day.
