How it was done in Cilento

Tomatoes are harvested at full ripeness and laid out in the sun on wooden racks, the way it has always been done in Cilento homes. No ovens, no fans: just the sun, slow and patient, that concentrates the sweetness and brings out the aroma day after day.

It's a method that takes time, but it's the one that gives the tomato its real flavour — the one you taste at the first bite, with no need for explanations.

Preserved in extra virgin olive oil

When the tomatoes are ready, we leave them whole and let them rest in extra virgin olive oil, with a few capers, a clove of garlic and a pinch of salt. Nothing else.

The oil is not just a preservative: it's part of the recipe. It keeps the tomatoes soft, preserves their aroma and becomes, when the jar is finished, a precious dressing for pasta, bruschetta and salads.

Short label, like in the old days

Five ingredients, nothing else. No preservatives, no colourings, no flavour enhancers. What you read on the label is what you find in the jar: tomatoes, oil, capers, garlic, salt.

It's the same raw material as our Sun-Dried Tomato Spread, but here the tomato stays whole — to be picked up with a fork and brought to the table in visible pieces.

How to use them

Perfect as an antipasto, on a board next to cured meats and aged cheeses. In the kitchen they become a dressing for pasta and risotto, an accompaniment for grilled meats, a topping for bruschetta and focaccia.

  • Antipasto board — On the board next to aged cured meats and hard cheeses. The simplest and oldest way to serve them.
  • Pasta or risotto dressing — Raw on hot pasta with a grating of pecorino, or stirred at the end of cooking into the risotto. Few gestures, full taste.
  • Grilled meats — Next to a piece of grilled meat, where the tart note and the aromatic oil balance the fat and perfume the dish.
  • Bruschetta and focaccia — On country bread bruschetta or focaccia, with a drizzle of the oil from the jar. The savoury snack of the old days.

The product

How it was done in Cilento.

In the homes of Cilento, summer was the time for tomatoes laid out in the sun. They were picked by hand, cut and left on wooden racks for days, until the sun had done its work. Then they were put in oil, with a few capers and a clove of garlic, and kept for the winter.

We still do it that way. Five ingredients, the same method as in the old days, no preservatives, no tricks. It's the same raw material as our Sun-Dried Tomato Spread, but here the tomato stays whole — like when you took it out of grandma's jar.

Three traditional steps

Nothing new, and that's the point.

  1. Harvest at full ripeness

    Tomatoes hand-picked in the months of full sun, when the sweetness is natural and the colour intense.

  2. Sun drying

    Laid out by hand on wooden racks, exposed to the sun for days. No ovens, no shortcuts: just the time of the sun.

  3. Filled in EVO oil

    Cold preservation in extra virgin olive oil with capers, garlic and salt. Glass jar, short label.
