Lemon marmalade brings a burst of brightness to the breakfast table: zesty, fruity and wonderfully aromatic. With untreated organic lemons, it comes together effortlessly.

Ingredients
- 1 kg organic lemons (untreated)
- 600 g jam sugar (with pectin)
- 500 ml water
Method
- Wash the lemons in hot water, pare the zest into thin strips.
- Suprem the flesh, remove any seeds and collect the juice.
- Briefly blanch the zest to soften its bitterness.
- Combine flesh, juice, zest and jam sugar, bring to a rolling boil for 5 minutes.
- Test for set, then ladle the hot marmalade into sterilised jars.
Tip to keep bitterness in check
The white pith is the culprit for bitterness – scrape it away as much as possible. A quick blanch of the zest strips further mellows the bite while preserving the vibrant aroma.
