Washington oranges, a Cilento variety

Minnelea's Orange Extra Marmalade is born from the Washington orange, a variety grown in the Cilento National Park. They are sweet, juicy, seedless oranges, which allow a simpler and more direct processing: a single variety, a single character of taste.

A classic Mediterranean marmalade, essential in the recipe. No anonymous blends: only Washington oranges from Cilento, processed with care.

Essential recipe

We use juice and peel of orange to obtain a marmalade with full flavour and a recognisable aromatic profile. We add only cane sugar and a touch of lemon juice for natural preservation and acid-sweet balance.

No pectin, no thickeners, no preservatives, no colourings. The structure comes from the natural pectin of citrus and from cooking time.

Vacuum cooking at low temperature

Like our other sweet jams, the orange marmalade is processed by vacuum cooking at low temperature. A slow method, chosen to preserve the essential oils of the peel, the fresh aroma and the natural colour of the fruit.

The result is a bright orange marmalade, with visible peel pieces, with a full taste but never bitter.

How to use it

Perfect on toasted bread for breakfast, on brioche or rusks. In pastry it works for tarts, ring cakes and traditional biscuits. In gourmet pairings it shines with aged hard cheeses, where the citrus note balances the saltiness.

Metodo di lavorazione

Lavorazione artigianale in piccoli lotti, invaso a caldo nel vasetto di vetro per preservare aroma e colore. Niente conservanti, niente addensanti.

  • Orange tart — On a shortcrust pastry base with a generous layer of marmalade. A classic tart with citrus flavour, never cloying.
  • Ring cakes and biscuits — To enrich soft ring cakes and filled biscuits. The marmalade holds up to baking without losing aroma or colour brightness.
  • Aged cheeses — On the board next to aged hard cheeses. The citrus note balances the saltiness and creates a clean contrast.

The product

Washington oranges, citrus from Cilento.

The oranges we use are of the Washington variety, grown in the Cilento National Park. They are sweet, juicy, seedless oranges: a varietal choice that simplifies processing and gives the marmalade a recognisable character, far from industrial blends.

In the workshop we combine juice and peel, cane sugar and a touch of lemon juice. Vacuum cooking, slow, at low temperature. The natural pectin of citrus does the holding work: no thickeners, no shortcuts.
