Orange Marmalade Recipe: Make Your Own Fruity-Bitter Jar

Homemade orange marmalade is a breakfast icon: bright, gently bitter and bursting with aroma. With organic oranges and a little patience, it comes together effortlessly.

Ingredients

  • 1 kg organic oranges (untreated peel)
  • 1 lemon
  • 600 g jam sugar

Method

  1. Wash the oranges in hot water, then finely grate or thinly slice the peel from two of them.
  2. Segment the fruit, catching any juice.
  3. Combine the segments, juice, peel and lemon juice with the jam sugar.
  4. Bring to the boil and let it bubble vigorously for 4–5 minutes.
  5. Test for set, then ladle into sterilised jars while hot and seal immediately.

Fruity or bitter?

The peel lends that signature gentle bitterness – use less or blanch briefly if you prefer it milder. A dash of vanilla or a bay leaf while cooking deepens the flavour even further.
