Homemade orange marmalade is a breakfast icon: bright, gently bitter and bursting with aroma. With organic oranges and a little patience, it comes together effortlessly.

Ingredients
- 1 kg organic oranges (untreated peel)
- 1 lemon
- 600 g jam sugar
Method
- Wash the oranges in hot water, then finely grate or thinly slice the peel from two of them.
- Segment the fruit, catching any juice.
- Combine the segments, juice, peel and lemon juice with the jam sugar.
- Bring to the boil and let it bubble vigorously for 4–5 minutes.
- Test for set, then ladle into sterilised jars while hot and seal immediately.
Fruity or bitter?
The peel lends that signature gentle bitterness – use less or blanch briefly if you prefer it milder. A dash of vanilla or a bay leaf while cooking deepens the flavour even further.
