Sweet-and-sour pickled gherkins: the recipe that stays crisp

Gherkins stay crisp only if the work before the jar is done well: remove the blossom end, dry-salt, add a vine leaf for tannin and never go above 85 °C. Here is the refrigerator version, with the sweet-and-sour brine in the right proportions of vinegar, sugar, mustard and dill, plus instructions to turn it into a pasteurized preserve.

Sweet-and-sour pickled gherkins: the recipe that stays crisp

Method

  1. Wash the gherkins and scrub them one by one with a small brush: soil and mould spores stay on the skin. Discard right away any that are already limp, because they will not firm up again.
  2. Cut 3-5 mm off the blossom end, the one without the stem attachment: it is the most important step of the recipe. If in doubt, remove both ends.
  3. Mix the gherkins with the 25 g of salt in a large bowl and leave them for 3 hours at room temperature, shaking them from time to time. Throw away all the water they release.
  4. Rinse them under cold running water and dry them well with a tea towel: the water has now come out and the excess salt goes with it.
  5. Rinse two 500 ml jars and their lids with boiling water and let them drain upside down on a clean tea towel.
  6. Bring the vinegar to a boil with the water, sugar and the 12 g of salt, simmer for 2 minutes and remove from the heat. Wait 5 minutes: it should not be poured boiling hot over a raw gherkin.
  7. Put the vine leaf at the bottom of each jar, stand the gherkins upright, because more fit that way and they stay submerged, and distribute the mustard, bay leaf, dill, pepper and onion among them.
  8. Pour in the brine up to 1 cm below the rim, covering the gherkins completely, and tap the jar on the counter to bring the air bubbles up. If a gherkin sticks out, push it under: whatever stays dry goes mouldy.
  9. Let cool with the lid only resting on top, then close tightly and place in the refrigerator.
  10. Wait at least 3 days before opening the first jar. They are at their best between the fourth and seventh day and keep for one week in the fridge.
