Proportions per person
- Cured meats: 80-100g total, in 3-4 different types
- Jams: 2-3 small jars (90g) in separate bowls
- Cheeses: 50-60g, in 2 complementary types
- Bread: 60-80g, in rustic varieties
- Fresh fruit: pears, figs, grapes
- Dried fruit: walnuts, almonds, pistachios
Visual arrangement
Arrange the cured meats in a fan or wave pattern on the board, alternating colours (red of crudo, pink of cotto, burgundy of bresaola, brown of soppressata). The jams go in small bowls placed at the vertices. Add individual wooden teaspoons to avoid contamination.
Common pairing mistakes
- Excessive jam dose: the jam accompanies, doesn't cover. A teaspoon is enough.
- Industrial jams: too much sugar, little fruit, flat taste. Invest in artisan.
- Wrong temperature: cured meats should be taken out of the fridge 20-30 minutes before consumption.
- Wrong bread: industrial sandwich bread ruins every pairing. Choose rustic, country bread or focaccia.
