Cilento oil-preserved vegetables: tradition and perfect pairings

The Cilento oil-preserved vegetables tell an ancient story: that of farming families who at the end of summer transformed the abundance of the vegetable garden into winter preserves, to be kept in the pantry until the following spring. A tradition that today continues in the small artisan workshops of the territory.

What are oil-preserved vegetables

Oil preservation is an ancient technique that exploits the barrier effect of extra virgin olive oil against oxygen and microorganisms. The vegetables, often previously blanched in vinegar and salt (so-called scalding), are then arranged in jars and covered with EVO oil.

The quality of an oil-preserved product depends on three elements:

  • Raw material: seasonal, local vegetables, harvested at the right ripeness
  • Oil: quality extra virgin olive oil, ideally local
  • Processing: artisan, in small batches, without chemical preservatives

The traditional Cilento oil-preserved vegetables

Aubergines in oil

Probably the most representative oil-preserved product of southern Italy. Aubergines are sliced or diced, salted to release vegetation water, blanched in vinegar and then preserved in EVO oil with garlic, chilli and oregano. Intense flavour, slightly spicy, perfect on country bread.

Roasted peppers

Peppers are oven-roasted, hand-peeled, cut into strips and preserved in oil with garlic and basil. Sweet and soft, they are ideal on bruschetta or as a cold side.

Sun-dried tomatoes in oil

Sun-dried tomatoes, softened in water and vinegar, then preserved with capers, oregano and oil. Maximum flavour intensity, an aroma that takes you back directly to Cilento summer.

Black and green olives

Cilento olives, in particular Pisciottana and Salella cultivars, are brined and then preserved in oil with garlic, wild fennel and chilli. Excellent for aperitivos and boards.

Baby artichokes in oil

Small spring artichokes, blanched in white vinegar and then preserved in EVO oil with thyme and garlic. Refined flavour, perfect for elegant appetisers.

Mushrooms in oil

Porcini, honey fungus or mixed wild mushrooms, picked in Cilento pine forests. Blanched in vinegar and preserved in oil with parsley, garlic and chilli. An autumn delicacy.

The perfect board with Cilento oil-preserved vegetables

For a complete Mediterranean board:

  • 3-4 different oil-preserved items: aubergines, peppers, sun-dried tomatoes, olives
  • Local cheeses: Cilento pecorino, caciocavallo, salted ricotta
  • Cured meats: dry sausage, capocollo, soppressata
  • Bread: Cilento country bread or Castelvetere bread
  • Taralli: with fennel or chilli
  • Fresh tomatoes: sliced with a drizzle of EVO oil

Oil-preserved vegetables in the kitchen: 7 quick ideas

1. Bruschetta with aubergines in oil: toasted bread, aubergine slices, a grind of pepper. 2 minutes.

2. Pasta with sun-dried tomatoes and olives: spaghetti drained al dente, creamed with chopped sun-dried tomatoes, black olives and a sprinkle of pecorino.

3. Mediterranean farro salad: cooked farro, roasted peppers, olives, cherry tomatoes, fresh basil.

4. Oil-preserved omelette: eggs, finely chopped aubergines in oil, parmesan. In the pan 10 minutes.

5. Mixed crostini: toasted bread, fresh ricotta or goat's cheese, a selection of oil-preserved on top.

6. Oil-preserved pizza: cooked white pizza, completed raw with roasted peppers, olives, sun-dried tomatoes.

7. Gourmet sandwich: country bread, cheese, prosciutto crudo, aubergines in oil. Picnic sorted.

How to preserve opened oil-preserved jars

Once opened, oil-preserved vegetables should be stored in the fridge. Always check that the vegetables are completely covered by oil (add a little EVO oil if necessary): it is the condition for safe preservation. Consume them within 4-6 weeks of opening.

Food safety of artisan oil-preserved vegetables

Quality artisan oil-preserved vegetables follow rigorous protocols to ensure microbiological safety, in particular against Clostridium botulinum. Blanching in vinegar, pH control and the use of fresh oil are essential practices. Beware of "DIY" oil-preserved products without adequate technical skills: food safety is not improvised.
