How Peperoni sott’olio are born

The southern-Italian method is beautifully simple, in three acts: roast, peel, preserve. The peppers are charred over flame or in the oven until their skins blister — that’s where the smoky sweetness comes from. Next they’re peeled (the skin is tough and bitter), cut into strips, lightly acidified and submerged in native olive oil. The oil isn’t just packaging; it’s an ingredient. It absorbs the pepper’s perfume and later gives it back as a fragrant seasoning oil.

Good artisan producers work only with ripe, fleshy summer peppers and controlled acidification — the reason a quality jar stays stable for months while home-made versions belong in the fridge.

The quality check in the aisle

  1. Ingredient list: peppers, olive oil (ideally extra-virgin), vinegar, salt, perhaps herbs and garlic. Sunflower oil is the most common red flag; preservatives and colourants have no place in a premium jar.
  2. Whole strips, not scraps: producers who pack whole pieces have nothing to hide.
  3. Colour: deep red or golden yellow, never pale — pale peppers were picked too early.
  4. The oil: clear, golden, never cloudy.

Six ways to use the jar

  1. Straight as antipasto: 20 minutes out of the fridge, good bread alongside. Nothing more is needed.
  2. On the antipasti board: the colour and sweetness counterpoint to cheese and olives.
  3. With burrata or ricotta: a few strips on the creamy cheese, a drizzle of the preserving oil — a three-minute starter.
  4. In pasta: toss strips with garlic in the same oil, add pasta, shower with Pecorino. A ten-minute dish that tastes like summer.
  5. On a panino: instead of tomato, especially with Provolone or Mortadella.
  6. In salad: with cannellini beans, red onion and tuna — the southern-Italian classic.

And the oil left in the jar? Never pour it away: it’s now a scented olive oil ready for dressings, bruschetta or a quick sauté.

Preserving at home — short and honest

If you’d like to try: roast and peel the peppers (step-by-step here), blanch the strips for 2 minutes in a 1:1 vinegar-water bath, dry thoroughly, layer with garlic and herbs in sterilised jars and cover completely with oil. Store in the fridge and use within 3–4 weeks — shelf stability at room temperature requires controlled industrial processes. With oil preserves, this is a safety issue (botulism), not just flavour.

Frequently asked questions

Red or yellow — is there a difference?
Red are sweeter and more intense, yellow milder and more delicate. The prettiest jars mix both — a feast for the eyes as well.

How long does an open jar keep?
2–3 weeks in the fridge, as long as the vegetables stay submerged in oil. Top up with oil if necessary.

The oil solidifies in the fridge — is that bad?
Not at all. Extra-virgin olive oil clouds when cold. It will clear again in about 20 minutes at room temperature — a sign of authenticity, not a flaw.

Are preserved peppers vegan?
Naturally so: vegetables, oil, vinegar, salt. A quick glance at the label confirms it.
