Grilled Peppers: Roast, Peel, Marinate — The Southern-Italian Way

Grilled peppers are one of those dishes where technique matters more than the recipe itself: roast them properly and know the steam trick, and you’ll slip off the skin in thirty seconds flat. Miss the steps and you’ll be scraping in frustration. Here is the complete Cilento method—three roasting options, fool-proof peeling, and the classic marinade.

Step 1: Roasting — three methods

The goal is always the same: the skin must blister and turn black. Don’t fear the char—it only affects the peel, which will be discarded, and it gifts the flesh beneath its smoky soul.

On the grill (the original): Place whole peppers over direct high heat, turning every few minutes, 12–15 minutes total, until uniformly black and collapsed.

In the oven: 230 °C with the grill setting, peppers whole on a tray, 25–30 minutes, turning twice. The everyday method—reliable and fragrant enough to perfume the whole house.

Over a gas flame: Spear a pepper with tongs and hold it right in the flame—the fastest route for small batches and the most intense smoky aroma.

Step 2: The steam trick

Transfer the blistered peppers straight into a bowl and cover with a plate or foil for 15 minutes. Their own steam loosens the skin from the flesh. Afterwards the peel slips off like cling film.

Nonna’s three peeling rules:

  1. Never rinse under water—you’ll wash away the roasted perfume. Sticky fingers are the price of flavour.
  2. Work over a bowl to catch every drop of released juice—it’s liquid gold for the marinade.
  3. Remove the stem, seeds and white ribs, then tear or slice the peppers into wide strips.

Step 3: The classic marinade

For 4 roasted peppers: 4 tbsp extra-virgin olive oil, 1 garlic clove sliced, the reserved pepper juices, salt, parsley or basil to taste, and optionally a splash of vinegar.

Layer the strips in a shallow dish, spoon over the marinade, let them rest at least 1 hour—overnight in the fridge is even better. Serve at room temperature. They keep for 4–5 days and improve daily.

What to do with them

Served simply with bread as an antipasto; draped over burrata; chopped into pasta along with the fragrant oil; tucked into a panino with provolone; or alongside anything grilled. Common questions

Which peppers work best? Red and yellow pointed peppers or fleshy block peppers. Green ones are harvested unripe and stay bitter even after roasting—the only colour we leave out.

Does the skin really have to be completely black? It may—the darker the skin, the easier the peel and the smokier the flavour. What turns black never reaches the plate.

Can I freeze roasted peppers? Yes, peeled and without marinade, up to 3 months. Thaw, marinate, enjoy—summer from the freezer.

Why do my grilled peppers taste watery? Either under-roasted (the pepper must collapse, not just colour) or the juices were discarded instead of folded into the marinade.
