Summer bruschetta with jam and grilled vegetables: ideas for the perfect appetizer

The right bread

The starting point is the bread. In Cilento, tradition calls for naturally leavened durum wheat bread with a thick crust and a dense crumb. Toasted on the grill, it develops toasted notes and a crunchiness that stands up well to rich seasonings.

Pairing with jam

Artisan jam on a bruschetta is not an oddity: it is a return to the origins. Before industrial jams flooded supermarkets, homemade jam was a versatile condiment. Some particularly successful combinations: fig jam with fresh ricotta and walnuts, fig jam with seasoned pecorino cheese and rocket for the classic sweet-savoury-bitter, apricot jam with gorgonzola and acacia honey, pear jam with lard and black pepper.

Grilled vegetables: the base

Summer brings aubergines, courgettes, peppers, tomatoes. Grilled with a little oil and a pinch of salt, they become the main condiment of a hearty bruschetta. The addition of a small amount of jam completely changes the aromatic profile of the dish. Grilled aubergines with fig jam and goat's cheese: the bitterness of the vegetable, the sweetness of the fig, the acidic flavor of the cheese.
