Why Minnelea lemon marmalade is different

It starts with how it’s made. Only two ingredients—lemons and Italian sugar—and a 55 °C vacuum-cook that lets the fruit keep its original aromatic profile. No preservatives, no gelling agents, no added pectin. The marmalade sets thanks to the natural pectin in the lemon peel, slowly.

What does that mean on the palate? A bright citrus note balanced by clean sweetness, closing with a gentle acidic snap that refreshes the mouth. The texture is pulpy, never rubbery: you can still pick out pieces of candied peel with a fork. This sensory profile is what makes it so versatile—it sings in desserts but surprises even more in savoury dishes.

1. Rye toast + salted butter + lemon marmalade

The most grown-up breakfast combo we know. Toast a thick slice of rye until the crust crackles but the crumb stays tender, spread on a whisper of warm Breton salted butter, then crown it with a generous spoon of lemon marmalade. The butter’s salt teases out the citrus tang, the marmalade’s sweetness tames the rye’s ferment. Three ingredients, six minutes, a breakfast worth a pastry-shop detour.

2. Full-fat Greek yogurt + wildflower honey + toasted almond slivers

Spoon real, spoon-standing Greek yogurt into a bowl, swirl in our marmalade, drizzle half a teaspoon of wildflower honey to round the edges, and scatter coarsely cracked toasted almonds on top. Let it sit two minutes so the m stripes dissolve into golden veins. One taste and guests ask for the recipe.

3. Short-crust tart with ricotta cream and lemon marmalade

A classic tart: EVO-oil short crust, a cloud of ricotta and icing-sugar cream, finished with a glossy layer of our marmalade. The lemon’s acidity slices cleanly through the ricotta’s richness. Chill at least two hours; the marmalade turns into a mirror-bright surface that looks as good as it tastes.

4. Roast chicken glazed with lemon marmalade

Time for savoury. Roast a bird—or just two thighs—with rosemary, thyme and bay. Fifteen minutes before the end, brush on a glaze of two spoons of marmalade, one spoon of Dijon mustard, a thread of EVO oil and a crack of black pepper. Back in the oven until the skin turns a glossy amber you’d expect in a cookbook shot. The marmalade caramelises, the citrus perfumes the meat, the mustard gives it spine. Pair with a chilled glass of Cilento Falanghina.

3>5. Cheese board: fresh ricotta, young pecorino, sweet gorgonzola

The ultimate drink-friendly starter. On pale wood, set out a dollop of fresh ricotta, thin petals of young pecorino, a wedge of sweet gorgonzola, and beside them a tiny bowl of our lemon marmalade. Add hand-pulled grissini and shards of carta da musica, plus almonds and walnuts. The marmalade marries best with ricotta and gorgonzola; daredevils can try it with the pecorino for a sharper contrast. Works as both appetiser and cheese course.

6. Marmalade-stuffed Sunday pancakes

Thick, fluffy American-style pancakes made at a lazy Sunday pace. As you stack them, spoon slightly warmed marmalade between each layer. It melts, seeps, and streaks every cut. Dust with icing sugar and a few fresh lemon-zest curls. Brunch in twenty.

7. Lemon-marmalade gin & tonic

The aperitivo plot-twist. In an ice-filled shaker combine a level spoon of marmalade, 50 ml London-dry gin (Tanqueray works), and shake hard to dissolve. Strain into an ice-filled highball, lengthen with premium Mediterranean tonic (Fever-Tree), garnish with a fresh lemon twist. The marmalade replaces syrup—bringing sweetness, layered citrus and a silky body. We never stop at one.

How to store lemon marmalade

Keep in a cool, dry place away from heat and direct light. Once opened, refrigerate and enjoy within 20 days. The 212 g Bormioli Ergo jar seals tight, locking in aroma.

FAQ about Minnelea lemon marmalade

What’s the difference between marmellata and confettura di limoni?

Under EU rules (Directive 2001/113/EC) “marmellata” is reserved for citrus—lemons, oranges, mandarins. Other fruits become “confettura”. Ours is extra because it carries at least 45 g fruit per 100 g finished product.

Why does your lemon marmalade cost more?

Three things: hand-picked, in-season Cilento lemons selected one by one; Italian sugar (not bulk import); and 55 °C vacuum-cooking that takes longer and needs special gear—something large factories skip because it doesn’t scale. We make only a few hundred jars per batch.

Can I use your lemon marmalade in savoury cooking?

Absolutely, and it shines. Beyond our glazed chicken, chefs have used it on pork ribs, to finish a lemon risotto, even with seared foie gras. Remember it brings both sweetness and acidity—balance the dish accordingly.

Is it suitable for a vegan breakfast?

Yes. Only two plant-based ingredients—lemons and Italian sugar—no dairy, no honey, no animal additives. Try it on whole-grain toast with tahini for a surprisingly filling vegan start to the day.

How long does it keep once opened?

Twenty days in the fridge, lid on tight. Lemon’s natural acidity helps, but for peak aroma we recommend staying within that window.

Do you make other marmalades or confetture in the same artisan style?
