The simple recipe
- 400 g crushed tomatoes (passata)
- 2 tbsp extra-virgin olive oil
- a pinch of oregano, sea salt
- 1 small garlic clove, finely grated (optional)
Whisk everything together—that’s it. Spread the sauce thinly over your pizza dough so the base stays crisp.
The most common mistakes
Too much sauce turns the crust soggy. Excess water in the tomatoes is another culprit—passata is ideal for this. Season gently: good oregano and a swirl of fine olive oil are usually all you need.
