Oven-Roasted Mushrooms

  1. Clean the mushrooms; halve any large ones.
  2. Toss with extra-virgin olive oil, garlic, salt and herbs.
  3. Roast at 200 °C for about 20 minutes, until golden.
  4. Scatter with parsley and serve warm or at room temperature.

Mushrooms Preserved in Olive Oil

Briefly poach small mushrooms in water with a splash of vinegar, drain, then layer with garlic and herbs in extra-virgin olive oil. Make sure they are completely submerged and store chilled.

How to Serve

Add them to an antipasti board, pile onto bruschetta, or pair with cheese. Their earthy depth marries beautifully with other sott’olio vegetables.
