Oven-Roasted Mushrooms
- Clean the mushrooms; halve any large ones.
- Toss with extra-virgin olive oil, garlic, salt and herbs.
- Roast at 200 °C for about 20 minutes, until golden.
- Scatter with parsley and serve warm or at room temperature.
Mushrooms Preserved in Olive Oil
Briefly poach small mushrooms in water with a splash of vinegar, drain, then layer with garlic and herbs in extra-virgin olive oil. Make sure they are completely submerged and store chilled.
How to Serve
