Artisan and industrial preserves: what to ask about production
Share
The word artisan does not, on its own, explain how a preserve was made. Comparing two jars requires information about the actual products, not assumptions based on company size. This guide focuses on production and the questions to ask a producer.

Ask how the fruit is processed
Ask how the fruit is selected and processed, and what texture is intended for that product. Minnelea describes low-temperature vacuum cooking on its product pages. For temperatures and processing parameters, request the specification for the individual product.
Compare recipes, not abstract categories
Industrial products do not all share one recipe, and artisan products do not all use the same ingredients. Compare the labels of the products you want to buy. Neither the price nor the absence of a particular additive lets you reconstruct the process or automatically predict how it will taste.
Assess the preserve in its intended use
Try it on bread, in yoghurt or alongside the cheese you plan to serve. Observe flavour and texture in that preparation. For trade supply, request the product specification and terms for the individual item: information about another flavour or an old article is not an order specification.
From the producer to your jar
The Minnelea fig preserve page connects the description of production with the product you can buy. Choose Dolce Risveglio to compare flavours at breakfast. For your shop or café, use the dedicated trade price list request.
