But a memorable board is never random. There’s a method to choosing, pairing and placing each element so everything sings in harmony.
Anatomy of a Perfect Board
A complete antipasti board has five building blocks. You don’t need them all every time, yet knowing the structure helps you strike the right balance.
1. Sott’olio (the heart of the board)
They are the focal point—flavour-packed, ready to serve, beautiful to look at:

The 5 Rules of Board Building
1. Flavour contrast
Sweet (peppers) + salty (pecorino) + tangy (sun-dried tomatoes) + bitter (garnish of rocket). If every bite differs from the last, the board works.
2. Texture contrast
Crunchy (breadsticks) + silky (aubergines) + creamy (burrata) + granular (parmigiano). Variety of texture matters as much as flavour.
3. Colour
We eat with our eyes first. Sott’olio help: the red of sun-dried tomatoes, the violet of aubergines, the yellow-red of peppers. Add white mozzarella and a few basil leaves for green.
4. Portions
For drinks, allow 100–150g per person. For a dinner-board (where the board is the main event), plan 250–300g per person.

5. Temperature
Serve sott’olio at room temperature—pull them from the fridge at least 30 minutes ahead. Cold dulls flavours; EVO solidifies and loses its perfume.

For 6 people as a starter, 3 different sott’olio jars are enough (about 100g per person). Add cheeses, bread and a pâté to round it out. For a dinner-board, plan on 4–5 jars.
Can I serve sott’olio straight from the fridge?
Best not. EVO-based sott’olio shine at room temperature: the oil flows, flavours open. Take them out 20–30 minutes before serving.
