Master Recipe
- 500 g carrots
- 1 Tbsp butter or extra-virgin olive oil
- 1 tsp sugar or honey
- small splash vegetable stock, sea salt
- Peel the carrots and cut into elegant batons or coins.
- Sauté in butter until just gilded, then sprinkle in the sugar and let it caramelise gently.
- Deglaze with a little stock and simmer over medium heat until the liquid reduces to a glossy coat and the carrots are tender to the bite.
- Finish with a pinch of salt and a flurry of fresh parsley.
Tips & Variations
A squeeze of orange juice or a whisper of fresh ginger lifts the flavour to new heights. For the ultimate shine, let the liquid reduce completely, swirling the pan so every carrot is cloaked in syrup. Prefer a Mediterranean touch? Swap the butter for Minnelea’s own extra-virgin olive oil.
