Four ways to bring it to the table, beyond the classic breakfast slice.

1. Speedy no-bake cheesecake

A cheesecake that takes twenty minutes to assemble and sets itself in the fridge. For a 22 cm springform: 200 g crushed plain biscuits, 100 g melted butter, 500 g spreadable fresh cheese, 100 g icing sugar, 200 ml whipped cream, half a jar of wild-berry jam.

Mix the crumbs and butter, press into the base. Chill thirty minutes. In a bowl, fold together cheese, sugar and whipped cream. Spread over the base, level and refrigerate four hours.

Just before serving, blanket the top with wild-berry jam. Instant visual drama, balanced flavour.

2. Sweet crêpe filling

Delicate crêpes with wild-berry jam and ricotta. For four crêpes: 60 g flour, 1 egg, 150 ml milk, a pinch of sugar, a pinch of salt. Cook thin crêpes in a pan.

On each crêpe, spread two tablespoons of fresh ricotta mixed with a teaspoon of sugar. Top with a spoonful of wild-berry jam. Fold in half or into a triangle.

Dust with icing sugar to finish.

3. With fresh cheeses: ricotta and roiola

The tangy edge of wild berries pairs beautifully with fresh cheeses. On a plate: a generous spoonful of fresh ricotta or robiola, two tablespoons of wild-berry jam alongside, a few whole-grain crackers or slices of country bread.

Works as a snack, a light dessert, or a one-dish summer supper.

4. Instant wild-berry gelato

A five-minute dessert for surprise guests. Two scoops of fior di latte or vanilla gelato in a bowl. Top with two tablespoons of wild-berry jam. Add a handful of fresh berries if in season (blueberries, raspberries). Shave over a little dark chocolate.

Best when the gelato is slightly softened (leave it out of the freezer for five minutes).

Bonus: wild-berry porridge

A warming winter breakfast. Cook rolled oats with milk (or plant drink). When creamy, stir in two tablespoons of wild-berry jam. Scatter chopped almonds or walnuts on top.

Storage

Once opened, keep refrigerated. It stays perfect for four to six weeks. Always use a clean spoon to avoid contamination.
