Sun-Dried Tomato Starters: 10 Quick Ideas for Aperitivo & Cheese Boards

Sun-dried tomatoes are one of the most powerful pantry weapons when it comes to starters. In five minutes they turn bread, cheese and little else into an appetiser that looks hours-ahead. Their concentrated, sweet-salty flavour talks to almost everything: fresh cheeses, cured meats, eggs, vegetables, pulses. A flick of creativity and the board becomes a work of art.

In this guide, ten quick ideas for nibbles and aperitivo based on sun-dried tomatoes. From the most classic crostini to the more refined bites, all ready in 10 minutes or less. At the end, the shortcut: our artisan sun-dried tomato paté.

1. Crostini with sun-dried tomato paté & ricotta

The classic. Toast some bread, spread fresh ricotta seasoned with salt and pepper, add a generous spoon of sun-dried tomato paté, a swirl of EVO oil, a few basil leaves. Time: 5 minutes. A starter that never fails.

Refined twist: top with a shard of Pecorino Romano and a few pink peppercorns.

2. Bresaola rolls with sun-dried tomatoes & rocket

>Lay out the breasaola slices, brush each one with a teaspoon of paté, add a tuft of rocket and Parmigiano shards. Roll, secure with a toothpick. In 10 minutes you have an ultra-elegant starter.

Portion: 1 slice of breasaola per roll, 3 rolls per guest.

3. Mozzarella with sun-dried tomatoes & basil

A braid of fior-di-latte diced, dressed with thin strips of sun-dried tomato, basil, EVO oil, coarse salt, black pepper. It’s a winter “Caprese”, for when fresh tomatoes are not at their best.

Tip: works even better with burrata: break it in the centre and arrange the tomatoes around.

4. Canapés with blue cheese & sun-dried tomatoes

Toasted whole-wheat bread, a thin layer of mild Gorgonzola, sun-dried tomato strips, a drop of chestnut honey, a walnut crumbled roughly. Perfect contrast between the salty blue, the sweet tomato and honey, the nut crunch.

5. Ricotta mini flans with sun-dried tomatoes

Butter some mini-muffin moulds, mix 200 g ricotta with 1 egg, 30 g Parmigiano, salt, pepper, 50 g chopped sun-dried tomatoes, 1 tbsp chives. Fill, bake at 180°C for 20 min. Served lukewarm they’re restaurant-grade.

Yield: 6 half-portion flans, enough for 3 people.

6. Devilled eggs with sun-dried tomato paté

Hard-boil eggs, remove yolks and blend with mayo + paté + chopped parsley. Pipe or spoon back into the whites. Garnish with black-olive rounds.

A “1980s birthday-party” starter, modernised by the tomatoes.

7. Courgette carpaccio with sun-dried tomatoes

Slice courgettes paper-thin on a mandoline, lay on a plate, top with diced sun-dried tomatoes, Parmigiano shards, EVO oil, lemon, coarse salt, pepper. A fresh, light, beautiful starter.

Tip: rest 10 min before serving—the lemon softens the courgettes just enough.

8. Chickpea hummus & sun-dried tomatoes

400 g cooked chickpeas, 2 tbsp paté, 1 tbsp tahini, juice of ½ lemon, 2 tbsp EVO oil, salt. Blitz. Serve with toasted pita or crudités (celery, carrots, radishes).

Yield: bowl for 4-6 as a shared starter.

9. Mini focaccia with sun-dried tomato

Not strictly a starter but an aperitivo finger. Knead 250 g flour + 5 g yeast + 150 ml warm water + oil + salt. Prove 1 h, press into tray, cover with tomato strips, oregano, olives. Bake 220°C for 15 min. Cut into squares and serve warm.

10. “Southern” board with sun-dried tomatoes

A crowd-pleasing platter. On a wooden board place: a bowl of paté, Southern cured meats (soppressata, capocollo, salame Napoli), cheeses (caciocavallo, provolone, pecorino), toasted country bread, mixed olives, toasted almonds, dried figs. A journey through the Mediterranean without leaving home.

Portion: about 60 g cured meat + 50 g cheese per person, the rest in abundance. For 4 people use a whole jar of paté.

How to throw a sun-dried-tomato aperitivo

For 4 people, a “proper” aperitivo needs:

  • 8-10 crostini with at least 2 different toppings
  • One “hot” bite (mini flan, focaccia, roll-ups)
  • One cold bite (carpaccio, devilled eggs, mozzarella)
  • Olives, almonds, breadsticks to “fill”

You’ll need: 1 jar of paté, 200 g country bread, 1 mozzarella, 100 g breasaola, 4 eggs, 200 g ricotta, herbs and garnishes. Total cost: under €20 for an aperitivo that looks twice the price.

How to present the starters

Three practical rules:

  • Colour repetition. The red of the tomatoes is the chromatic star. Add at least one white element (mozzarella, ricotta) and one green (basil, rocket, parsley) for contrast.
  • Texture variety. Alternate soft (paté, ricotta), crunchy (toast, breadsticks, pine nuts) and chewy (cured meats, olives).
  • Controlled abundance. Better a few beautiful plates than lots of mediocre ones. A board “70% full” looks more inviting than an overcrowded one.

FAQ

Can I prep the starters ahead?

It depends. The paté keeps 20 days in the fridge (sealed), toasted crostini 1 hour. Flans and focaccia can be made 2 h ahead. Devilled eggs and rolls are best assembled last minute—they lose crunch.

How many sun-dried tomatoes per person?

About 20-30 g per guest, the equivalent of 4-5 natural pieces or 2 tbsp of paté.

Can the paté be served cold?

Yes, it’s designed for room-temperature use. If just out of the fridge, let it stand 15 min before spreading: it loosens up and releases aroma.

How do I make the bites vegetarian/vegan?

Most ideas are already vegetarian. For vegan: swap out ricotta, mozzarella and Parmigiano for plant-based cheeses or hummus. The chickpea hummus with sun-dried tomatoes (idea n. 8) is already 100% vegan.

Can they go on a buffet?

Yes, but pick items that hold well out of the fridge for 1-2 h: flans, focaccia, crostini, boards. Avoid mozzarella or ricotta left too long in the warmth.
