Sun-dried tomatoes are the umami power plant of Italian cooking: what the southern-Italian sun concentrates into a single tomato replaces stock cubes, pancetta and hours of simmering all at once. First things first: to soak or not to soak?

Oil-packed sun-dried tomatoes (like these) are ready to go—drain, slice, done. Dry-packed ones need 15–20 minutes in lukewarm water (or half water, half vinegar for extra brightness) or they stay stubbornly chewy. In both cases, remember: the preserving oil is aromatic gold—use it in dressings, for sautéing, or simply drizzled over the finished pasta.

The 10 recipes

1. Pesto Rosso (the classic). 100 g sun-dried tomatoes, 30 g almonds, 30 g Parmigiano, basil, olive oil—blitz briefly. Sicily’s answer to green pesto, perfect with fusilli. Even faster: stir two spoonfuls of the cooking water into ready-made sun-dried-tomato paté for an instant sauce.

2. Spaghetti with sun-dried tomatoes, garlic and breadcrumbs. Sauté tomato strips in their own oil with garlic, add the pasta, shower with toasted breadcrumbs—the “poor man’s Parmigiano” dish from Puglia.

3. Chicken with sun-dried tomatoes and cream. Sear chicken fillets, add tomato strips, a splash of cream, spinach—the famous “Marry Me Chicken” base that is, in truth, simply southern Italian.

4. Focaccia topping. Drape the dough with tomato strips, olives and rosemary—sun-dried tomatoes survive the oven far better than any fresh ones.

5. Crostini with ricotta and tomato strips. Creamy meets intense—an antipasto in five minutes.

6. Tomato butter. Finely chopped tomatoes folded into soft butter with salt and basil—spread on warm bread or melt over steak.

7. In salad instead of fresh tomatoes (winter!). Combine strips with white beans, tuna and red onion—the salad tastes like August, not January.

8. Risotto with sun-dried tomatoes and Pecorino. Add the tomatoes halfway through—they season the whole pot.

9. Stuffed aubergines or courgettes. Upgrade a meat or rice filling with chopped tomatoes—umami depth without stock cubes.

10. Italian breakfast eggs. Scrambled eggs with tomato strips and basil, served with toast brushed with the preserving oil.

The dosing rule

Sun-dried tomatoes are concentrate: they season, they don’t bulk. Rule of thumb: 30–50 g per dish for four people is plenty—more turns dishes sour-dominant. If you want the flavour even more concentrated and spreadable, reach for the paté: one teaspoon equals roughly five chopped tomato halves.

How long does an open jar keep?
In the fridge, 3–4 weeks as long as everything stays submerged in oil. Top up with olive oil if needed.

Can I cook sun-dried tomatoes?
Yes—they’re hardier than fresh and release more flavour the longer they cook. Only very high-heat searing can burn the sugar edges: use medium heat.

Sun-dried tomatoes are too intense for me—what can I do?
Soak longer (even the oil-packed ones: rinse briefly), chop smaller, mellow with ricotta or cream. Or choose the semi-dry version (semi-dry): milder, fruitier.
