Cilento red apples, autumn harvest

Minnelea's Red Apple Extra Jam is born from selected red apples, hand-picked from a small Cilento farm. The harvest moment is the one when the fruit is at its peak ripeness: firm pulp, natural sweetness, an aroma that tells of autumn.

A simple jam, built on a single fruit and a single direction of taste: the real apple, with no substitutes.

Essential recipe, 130% concentration

For each jar we use 130 g of red apples to obtain 100 g of finished jam. The fruit loses water during cooking and what remains in the jar is the concentrated part: full aroma, soft structure, natural sweetness.

Only red apples at 75% and cane sugar at 25%. No pectin, no thickeners, no preservatives, no colourings. The natural pectin of the apple does the holding work: the consistency comes from the fruit itself and from cooking time.

Vacuum cooking at low temperature

Like our other sweet jams, red apples are processed by vacuum cooking at low temperature. A slow method, chosen to preserve the colour, fresh aroma and soft consistency of the fruit, without forcing the process.

The result is an amber, velvety jam, balanced in sweetness — designed for those who look for an authentic apple flavour.

How to use it

Perfect on toasted bread for breakfast, on rusks or pancakes. In pastry it works for tarts, strudel and traditional autumn desserts. In gourmet pairings it shines with aged cheeses and roasts, where the sweetness of the apple balances saltiness and the fatty side.

Lavorazione artigianale in piccoli lotti, invaso a caldo nel vasetto di vetro per preservare aroma e colore. Niente conservanti, niente addensanti.

The product

Cilento red apples, autumn harvest.

Red apples are hand-picked at a small Cilento farm, when ripeness is full and the aroma already carries the autumn signature. They are full-pulp apples, chosen to be processed whole, without throwing anything away.

In the workshop we combine only the apples and cane sugar. No lemon, no industrial pectin: the natural pectin of the apple is enough to build the right consistency. Vacuum cooking, slow, at low temperature.

How this jam is made

Three essential steps, no shortcuts.

  1. Sustainable harvest

    Red apples hand-picked at a local farm, with sustainable methods, at the moment of full autumn ripeness.

  2. Vacuum cooking

    Vacuum processing, at low temperature, with cane sugar. No pectin added: the apple has enough naturally.

    Hot-filled into the glass jar for natural preservation, with no added preservatives.
