Before the toppings, the basics. They sound obvious, but you’ll taste the difference:

  1. The bread — Naturally-leavened country loaf with a proper crust. Slices about 1.5 cm thick. Skip the sandwich loaf.
  2. The toast — Grill, cast-iron pan or oven (200 °C for 5 min). Golden and crisp outside, still soft inside.
  3. The garlic — Rub half a clove on the hot slice. It melts into the warm crumb, fragrant but never harsh.

Which bread for bruschetta?

Country-style, naturally-leavened loaf with a crust. Slices about 1.5 cm thick so they hold the topping without going soggy. Skip sandwich bread and anything too soft. Ciabatta, Pugliese or salt-free Tuscan loaves all work.

Can I prep bruschette ahead?

You can toast the base 1–2 hours earlier. Add toppings at the last minute or the bread softens. Exception: pâté can be spread 15–20 min ahead—it’s dense and won’t soak the crumb.

How many bruschette for an aperitivo?
